In this episode of North Chuck Hookup, we’re going to head to Boxcar Betty’s, home of the best gourmet fried chicken sandwiches you’ll ever taste. We’ll meet with the Director of Operations, Ira Hill, to learn more about this delicious restaurant and everything its menu has to offer.

Elevating Fried Chicken

Boxcar Betty’s has several locations in North Charleston, Mount Pleasant, and West Ashley. In North Charleston, you can find them at 7800 Rivers Avenue. The restaurant is in the fast-casual industry, meaning you can grab and go—but won’t sacrifice on quality and flavor.

In 2014, owners Ian MacBryde and Roth Scott wanted to set themselves apart within that business. Their goal was to do a few things extremely well, creating a new take on a classic Southern dish: the fried chicken sandwich. While it might seem like a piece of chicken, bread, and pickles is all that’s required, Boxcar Betty’s takes their sandwiches to the next level.

The kitchen serves up several homemade offerings around their Southern-style, finger-lickin' fried chicken. They brine their chicken and have their own house mix for seasoning. Even the way that they fry the chicken is designed to make you feel like you're enjoying a meal at home—but a little bit elevated.

Southern Staples

Along with delicious fried chicken, there are other Southern staples on the menu for patrons to enjoy. One example is the pimiento cheese that comes on the sandwich—which is a Southern favorite. These flavor combinations are a result of years of tasting many flavors in the kitchen.

Ira and the owners had been working at a fine dining restaurant in downtown Charleston. They’d been tasting food and sampling people's recipes for years. When the business was launched, it included lots of brainstorming on what flavors go together.

Most people would never imagine that pimiento cheese, peach coleslaw, pickles, and spicy mayo would all go together on the same sandwich. For the owners, though, those flavors meshed well—and they were right. While Ira may have been skeptical originally, the recipe is a hit.

Fresh, High-Quality Ingredients

At Boxcar Betty’s, all of their ingredients are fresh. The coleslaw is made fresh every morning and thrown out at the end of the night to ensure that it’s always at its best. The same rule goes for the chicken, cut fresh each day, and many of the other sides.

The chicken is brined in a saltwater solution with an herb mixture inside of it. By letting it soak in the brine, the chicken swells with flavor—ensuring a juicy result when the sandwich is assembled. Most places concentrate on flavor outside of the food, but Boxcar Betty’s ensures there’s flavor inside as well.

They also offer the Chicken “Not So Waffle” sandwich, featuring bacon jam, maple syrup, pimiento cheese, and tomato. A perfect side is the sweet potato fries, topped with cinnamon sugar and nutmeg and made super crispy so you don't get soggy fries. They’re deliciously fresh and not too sweet.
